
Watermelon Chicken

I was asked to smoke a watermelon Chicken.. I’ll be honest, I have never heard of this and was not convinced this would turn out well. I didn’t have any recipe to follow, so I did what I felt would work best based off my experience smoking chicken. This chicken was SO JUICY and tasted great! That being said, the skin was not crispy.. and let’s be honest, everyone wants a crispy chicken! I’m sure there are ways to make the skin crisp, and I may possibly try this again in the future and change a few things up, but this round of smoked watermelon chicken was not a 10/10.
If you decide to give this a try, let me know how it turns out for you. You definitely CANNOT have it sealed in the watermelon the whole time. About 2.5 hours into the smoke, I took off the top of the watermelon.

INGRIDIENTS:
one whole chicken
beer of your choice
rub of your choice - I used Operation BBQ Relief All-Purpose Rub!
Watermelon
DIRECTIONS:
Cut the watermelon in half, lengthwise
Scoop out the water melon so all that’s left is the rinds.
Season your chicken well
Place about 1/4 cup of beer in the watermelon rind
Place chicken in rind and cover up with the other rind to form a whole watermelon. I used toothpicks to hold the watermelon together.
Place on smoker at 350 degrees for 2.5 hours.
Remove top of watermelon and let the chicken smoke until internal temp is 165 (about another hour).
