Bacon Wrapped Chicken Bites

These bacon wrapped chicken bites are a family favorite in my home. I started making these years ago, way before I started to smoke meat. So, if you cannot smoke these, the oven will do just fine as well!

The ingredients are so simple, but the chicken bites are full of flavor. I use brown sugar and chili powder after wrapping the seasoned chicken in bacon. If you give these a try, let me know what you think.


Ingredients:

  1. Bacon 1lb - I found that thick cut bacon does not crisp up as well and creates a chewy end product. Thinner bacon makes for a better experience.

  2. 1-2lbs Chicken Breast - cubed into 1in pieces

  3. 2/3 cup Brown Sugar

  4. 1tbsp Chili Powder

  5. Your favorite BBQ seasoning. I used Meat Church Honey Hog this time around.



Directions:

  1. Set your smoker or oven to 350 degrees.

  2. Mix the brown sugar and chili powder in a bowl and set aside.

  3. Cut the chicken into bite sized pieces. Just big enough to wrap half a bacon strip around it, about 1in cubed.

  4. I seasoned my chicken with Meat Church Honey Hog after cutting it . You can also marinate the whole chicken breasts before cutting for more flavor!

  5. Cut the bacon strips in half.

  6. Take each piece of chicken and wrap it up with one bacon strip in a single layer.

  7. Take the chicken and bacon, dip it in the brown sugar & chili powder mixture, making sure it is fully covered. Shake any excess mixture off.

  8. Once all the chicken bites are covered in the brown sugar & chili powder mixture, set them on the smoker or on an oven safe baking sheet for about 30 mins. Your chicken will need an internal temp of 165 before taking them off the smoker.

  9. Let rest for 3-5 minutes

  10. Enjoy these delicious bacon wrapped chicken bites full flavor!
